From the Veggie U "Earth to Table" Curriculum

VEGGIE U Salsa

 

3 cups seeded and chopped fresh tomatoes (3-4 medium)
½ cup sliced green onions
½ cup chopped green bell peppers
½ cup chopped red bell pepper
2 Tb lime juice
2 Tb chopped fresh cilantro
1 Tb chopped jalapeno
3 cloves finely chopped garlic
½ tsp salt

Mix all ingredients and refrigerate 2-3 hours before serving
Serve with tortilla chips
