From the Veggie U "Earth to Table" Curriculum

VEGGIE U Pizza

 

1 Package whole wheat pita bread
2 8 ounce packages low fat cream cheese, softened
½ cup ranch dressing
1 cup chopped broccoli
1 cup chopped tomatoes
1 cup chopped green pepper
1 cup chopped cauliflower
1 cup shredded carrots
2 cups shredded cheddar cheese

1. In a small mixing bowl, combine cream cheese and ranch dressing
2. Warm pita bread in microwave oven
3. Spread the cream cheese mixture onto the warm pita bread
4. Top with vegetables and cheddar cheese
