Chef John Selick makes this fun recipe with his kids, and everyone has fun decorating their own pizza. The puff pastry adds a grown up element, kids love it and so do parents. The vegetables listed are basic, you can use what you have on hand or vegetables that your kids like. A great way to introduce more veggies!
Yield: 1 Pizza
Puff pastry (store bought) 1 sheet per pizza
1/2 C ricotta cheese
1 T Olive Oil
1/4 C shredded mozzarella
1 Egg, beaten
1/2 small zucchini, sliced
1/3 onion, chopped
1/3 red pepper, sliced
3 asparagus spears, sliced into 1" pieces
Herbs such as dried basil, oregano or pizza seasoning
(Arugula lettuce can be added after pizza cools)
Adults: Preheat oven to 425 degrees.
Keeping the puff pastry very cold is the key. Spread the ricotta cheese onto the pastry, leaving about an inch for the edge. Decorate with vegetables, using a colorful variety is great, making faces or scenes is even more fun. Sprinkle lightly with mozzarella cheese and herbs and brush the edges with the egg.
Bake for 20-25 minutes, or until everything is nice and golden brown. Enjoy!
