Veggie & Fruit Salad Smoothie

A Vitamix is uniquely able to completely blend ingredients to a very smooth consistency, which kids generally prefer. If you don't have a Vitamix, use a blender on high speed.

Smoothies incorporating veggies are a great way to get the veggie nutrition we all need. In this smoothie, carrots and cucumber balance the more intense sweetness of grapes, orange, pineapple, and apple-- for a liquid take on a fruit & veggie salad.

Yield: 3 C 


1/2 C red or green grapes

1 medium orange, peeled, halved, seeded

1/2 inch thick slice pineapple

1/4 cucumber, peeled

1 large carrot, chopped

1/4 medium apple, cored, seeded, chopped

2 cups ice cubes


Once you've prepared all the ingredients, let the kiddos place all them into the Vitamix or blender in the order listed and secure the lid. Begin processing on lowest setting, gradually increasing speed to highest setting. Blend until smooth. Enjoy!
